COFFEE
A Foolproof Guide to Brewing the Perfect Cup of Coffee
Follow these steps if you want to experience the ultimate cup of coffee.
Step 1: The Coffee
Always purchase whole bean coffee, preferably farm-direct and from a single estate. Make sure the whole bean coffee is freshly roasted and shipped to you in a valve-sealed bag. Store the premium coffee beans in dry, cool, and dark place, either in a zip-locked bag or a sealed container.
CoffeeMan Dan says, “Don’t put coffee in the freezer because the porous beans will absorb moisture, which will in turn deteriorate the coffee’s fine aroma.”
Step 2: Grinding
Use a Burr Grinder, Grind the whole beans just before you brew the coffee and only grind as much coffee as you are going to use at the time.
CoffeeMan Dan says, “Make sure you don’t grind the coffee too finely because that will break up the fibers of the coffee beans and overexpose their aromatic oils to oxygen, causing an excess flavor extraction that creates a bitterness.”
Step 3: Equipment
Use a French Press to brew the coffee and make sure all parts of it are perfectly clean. The Press should have a stainless steel or gold mesh filter. Make sure the pot you use to boil the water is also extremely clean as even small amounts of contaminants in the pot can affect the subtle flavors of the gourmet coffee and cause an undesirable bitterness.
CoffeeMan Dan says, “You can neutralize any remaining coffee oils or acids that remain on the coffee-making equipment by washing and rinsing it with baking soda and water.”

Step 4: The Water
Use cold filtered or bottled spring water to brew the coffee. Boil the water and then let it sit for just a short time before pouring it into the French Press. The water should cool to 200 degrees Fahrenheit before pouring. By pouring the water at just the right temperature you will maximize the release of the flavorful oils and aromas
CoffeeMan Dan says, “Use a thermometer once or twice to get an idea of how long you should let your water sit before pouring it into the French Press.”
Step 5: Brewing
Always use the Steeping method when brewing the perfect cup of coffee.
Use about 1½ to 2 tablespoons of coffee for each 6 ounces of water.
A larger grind size requires a longer brewing time.
After you pour the hot water into the French Press, wait about four minutes. This allows the coffee to steep as the flavors are released.
Plunge the press down very slowly when the coffee is ready. This allows the ground coffee and hot water to have optimal interaction, again maximizing the release of the flavorful and aromatic oils.
Other brewing methods include Drip Filtration, Vacuum Filtration, Percolation, Pressurized Fusion, and Decoction.
CoffeeMan Dan says, “Pre-warm your cup before pouring the coffee into it. You can do this by pouring some hot water into the cup and letting it sit a few moments before pouring the water out.”
Step 6: Enjoy
Begin consuming the coffee immediately after you have poured it into the cup in order to appreciate the optimal aromas and gourmet tastes.

DOGS.....
I had the most horrifying experience yesterday. My 12 yr old came running in saying my neighbors Bull Mastiff was killing there pet potbelly pig.I ran out side and you could hear the pig screaming all of my kids were home at the time and we all climbed on the fence yelling at the dog and throwing everything we could find but nothing could stop the dog from holding on the the pigs face.It was heat breaking I was in tears you could almost feel the pigs pain. My oldest son call the neighbors, they were at work he told my son to jump the fence and pull the dog away YEAH RIGHT like I would let my son put his life in danger. Needless to say by this time I and couldn't stop shaking but a little voice in my head told me to get my sons BeeBee gun even though I knew it was to late for the pig . I took aim and shot the dog at lest 3 times she finally let go and the pig stopped screaming . she calmly walked over to the fence and wagged her tail like she did something good. 5 mins later the neighbors girlfriend shows up and yelled at my kids "thanks for doing nothing" Wow I got pissed we did everything we could do with out putting our self's in danger I thought to my self is this lady for real I could have call Animal control or the police and I didn't. looking back I should have . Well it was finally over thank god but now i have to deal with my 4 yr old who is having a nervous break down asking me why did the pig have to die so for the next 3 hours I had answer that question over and over her little mind just couldn't understand what the dog had done or why the pig had died . I have never been a fan of Pitt bulls or Bull mastiff they are naturally aggressive dogs. I know there are good Dogs out there but this has left a imprint on my mind that I will never for get. I guess we all have to remember that dogs were one wild animals long ago even though they are are pets and companions every dog still has some kind of wild in them they will hunt, they will kill, If humans were not around they would survive. I have 3 dogs and Think about that every time I look at them.I am asking you do the same if you think even for a min that your dog will hurt a child or another animal please dont put them in a position that there instincts kick in.

God Bless America
-A little boy wanted
$100.00 very badly and prayed for weeks, but nothing happened .
Then he decided to
Write God a letter requesting the $100.00.
When The postal
Authorities received
The letter addressed to God , USA
They decided to send it to
President Obama.
Obama was so amused that he
Instructed his secretary to send the little boy a
$5.00 bill.
He thought this would appear to
Be a lot of money to a little boy.
The little boy was delighted
With the $5.00 bill and sat down to write a
thank-you
Note to God, which read: Dear God:
Thank you very much for sending the money. However, I noticed that for some reason you sent it through
Washington , D.C. and those
JERKS took $95.00 in taxes.
God Bless America!
.
A moment of sadness
I just read about another Blogger that passed away from cancer and it made me cry . And a few days ago one of my husbands friends niece died of unknown causes looking at my own kids this breaks my heart .It seem like every time I turn around some one dies or gets hurt . This affects me strongly even though I did not know them personally , and makes me wonder if I would hold up up anything happened to someone I did know. Am I strange ? Are there other people Like me ? .......
My 4yr olds Questions
YES!!! Its the middle of the week and still so much to do .I went to Walmart yesterday and My 4 yr old daughter Kept asking me what all the heart balloon and candy were for. When I told her that next week is Valentines day she promptly ask "What was Valentines day?" LOL DO I give her the long or short version ?as I thought for a minute to think of a simple way to explain to her my 12 yr old son blurts out " ITS FOR LOVERS" (gasp) cuz I knew what was coming . "mommy what are lovers" Wow what do I say to that , after telling my son to shush. I explained to her that Valentines Day is a special day when people show there love to each other with gifts. To my surprise she said " that silly mommy you know I love you all the time and I don't have to get you anything" I know what I said to her was not the best explanation of Vday but her response was the best a mom could ask for !!! I love my kids!

Toddler and Tiaras
I have been told at times I should keep my mouth shut . lol sometimes that is kinda hard. I say what should be said even when I know my opinion shouldn't be spoken so loudly, but in this case I have to say something. I DONT LIKE Toddlers and Tiaras! Why would any one in there right mind subject there child to something like this? I feel and my opinion is the parents are at fault, living some dream they couldn't accomplish in life and now are pushing it on there helpless child. Moms that are sugar doping there kids so they will be more excited!!! WHAT A JOKE!! OMG yes this makes me so mad . I know Not all the moms and dads out there are bad but the ones they show on TV are making the rest of them look BAD. NOT to mention the Networks for showing them !! Its kinda hard to put in words about how I feel about this show . I do dot encourage any one to watch this show much less promote this industry.

Getting better sleep Part 2
Much of our sleep patterns – feeling sleepy at night and awake during the day – are regulated by light and darkness. Light - strong light, like bright outdoor light (which is brighter than indoor light even on cloudy days) - is the most powerful regulator of our biological clock. The biological clock influences when we feel sleepy and when we feel alert. As a result, finding the balance of light and darkness exposure is important. Bright light helps to keep you awake during the day, but in the evening prior to sleep, bright lights can be disturbing.
What to do: Make sure to expose yourself to enough bright light during the day. Find time for sunlight, or purchase a lightbox or light visor to supplement your exposure to bright light. At bedtime, think dark: a dark bedroom contributes to better sleep. Try light-blocking curtains, drapes or an eye mask. If you find yourself waking earlier than you'd like, try increasing your exposure to bright light in the evening. It may delay sleep onset but as little as one to two hours of evening bright light exposure may help you sleep longer in the morning. Also, make sure to avoid light if you wake up in the middle of the night to go to the bathroom. Minimize light by using a low illumination night light.

getting better sleep PART 1
So i was wondering if any is like me for the last year i have only gotten to sleep in till 6 am at the latest ,my body's internal alarm clock will not let me sleep past this time. i have been reading on how much sleep you need and other things about sleep and how important it is
Noises at levels as low as 40 decibels or as high as 70 decibels can keep us awake. That means that a dripping faucet can steal your sleep, as well as the next door neighbor's blaring stereo. But the absence or presence of a familiar noise can have as great an impact on your sleep as out-of-the-ordinary noises. Studies show that sirens and traffic noise from a city street can actually become soothing to longtime city sleepers (they will cringe at the thought of sleeping in the serene desert or mountain climate) just as the absence of the tick, tick, tick of your favorite clock while you try to sleep at a hotel can become a sleep stealer.
What to do: Try to block out unwanted sounds with earplugs or use "white noise" such as a fan, air cleaner or sound conditioner. Take your favorite clock with you when you travel in order to recreate familiar sounds that help you sleep.
